Crouton-Free Keto Caesar Chicken for People Who Read Labels

Even in the winter months, I can always go for a delicious Caesar Chicken Salad, the more keto and gluten-free, the better. Hello, Air Fryer Caesar Chicken, you beautiful Chicken-flavored beast!

By the time the Ides of March roll around, I’ve already logged more miles snowshoeing tourists through Big Bear than Julius Caesar logged betrayals. When you spend your days guiding wide-eyed visitors through snowdrifts, answering questions like “Is this real snow?” and “Do bears… you know… live here?”, dinner needs to be fast, filling, and absolutely not a blood-sugar disaster. Enter my Keto Caesar Chicken Salad—a salad so loyal it won’t stab you in the back at happy hour. No croutons, no regrets, just salty, anchovy-forward goodness that keeps me fueled for another day of snow, side-eye, and pretending March is spring. Consider this your warning: Beware the Ides of March. And also bread.

Here in 2026, I am embracing clean traditional comfort foods. This keto and gluten-free version of the traditional Caesar Salad is nostalgic but still bursting with flavor. The health trends in 2026 seem to be leaning towards Whole Foods with far fewer processed clean ingredients. Why on earth would you ever embrace trendy Chick-fil-A or Raising Cane’s fried chicken when you can embrace a zesty chicken salad lunch like this one in your home kitchen? Air Fryer Caesar Chicken is what was missing from your weekly salad menu!

The air fryer makes cooking the chicken thighs mega easy. The air fryer fried chicken skins on top of this glorious Caesar salad helps you imagine, okay, maybe you are chomping on croutons, although in reality, here in 2026, gluten makes the arthritis in your hands flare up so bad you can’t even grasp the handles on your mountain bike. This keto air fryer chicken salad helps you embrace 2026 healthier, lighter and cleaner.

This Air Fryer Keto Chicken Is What Caesar Would’ve Wanted

Why yes, you can create a keto Caesar chicken without croutons. I’m telling you, with these crispy chicken skin bites, you won’t even miss the croutons!

You can also substitute two teaspoons of mayonnaise for the egg yolks. Both versions of this dressing taste great. They are just a little different.

Keto Caesar Chicken So Good You Won’t Even Complain About the Lettuce

Step 1: Prep the Chicken (a.k.a. The Foundation of All Good Keto Decisions)

To make your Caesar chicken air fryer recipe, start by removing the skin from your chicken thighs. Set the skins aside — we’re turning those into crispy, keto “croutons,” because we’re amazing.

Remove the bone from each thigh (I save these for my dogs’ weekly bone broth because I am that person). Slice each chicken thigh into thirds and add the chicken pieces to a large zip-top bag.

Step 2: Make the Caesar Base (Gluten-Free & Keto-Friendly)

In a Nutribullet, combine:

Garlic cloves, Lemon juice, lemon zest, ¼ cup Pecorino Romano, Worcestershire sauce, Dijon mustard, Salt and pepper, 2 teaspoons olive oil, 1 teaspoon water

Blend until smooth.

Pour half of this mixture into the zip-top bag with the chicken (and the reserved skins). Seal and refrigerate for at least 2 hours to marinate. This is where the Keto Caesar Chicken magic starts.

Step 3: If loving anchovies and hating croutons is wrong, I don’t want to be right.

To the remaining Caesar mixture in the Nutribullet, add:

Egg yolks, remaining olive oil and Anchovy fillets

Blend again until creamy and luxurious. Set aside in the fridge until salad assembly time.

Step 4: Cook the Air Fryer Caesar Chicken

When you’re ready to cook, preheat your air fryer to 400°F.

Add the marinated chicken pieces and chicken skins to the air fryer basket in a single layer. Cook for 24 minutes, shaking the basket three times during cooking so everything browns evenly.

You’re aiming for juicy chicken and deeply crispy skins — the holy grail of Air Fryer Caesar Chicken.

Step 5: Make the Keto Cheese Shells of Glory (Because Plates Are Boring)

While the chicken cooks, make your Cheese Crisps With Structural Integrity.

Heat a nonstick skillet over medium-high heat. Sprinkle a thick, even layer of your two cheeses, that is 1/4 cup of pecorino romano and 1/4 cup of parmesan with chili flakes directly into the pan. Cook for about 3 minutes, just until melted and set (not browned).

Carefully lift the cheese round with a spatula and immediately drape it over an upside-down small bowl. Let it cool for 1–2 minutes until firm. Repeat to make two bowls.

Step 6: Assemble the Salad

In a large bowl, toss the romaine, tomatoes, and pepperoncini with the prepared Caesar dressing.

Divide the dressed veggies between your cheese bowls.

Step 7: Finish Like a Professional

Remove the chicken and crispy skins from the air fryer.

Slice the chicken into bite-sized pieces.

Chop the crispy skins into crouton-sized bits.

Add the warm chicken to one side of each salad (so it doesn’t wilt the lettuce), then sprinkle the crispy chicken skin “croutons” over the top.

Serve immediately and feel smug about your keto life choices and the fact that you Just Said No to croutons.
