Coconut Oil Deep Fried Summer Squash

     This is how you do it when you are camping in the Sierras.
     If its a fishing trip that means deep fried treats and lots of beer.
     We spent three days fishing eating delicious food and drinking way to much beer last week; such a perfect vacation.
     We fished at Silver Lake off a little boat we rented for a day. When we were not floating around the lake we were on the shore line throwing out our lines and cursing the full and beautiful harvest moon that was testing our fishing patience.
     We spent a few hours on the way back fishing a on a extremely windy afternoon at Convict Lake.
     Convict Lake is truly so very gorgeous, and only two miles outside of Bishop. It truly is a hidden treasure of California ( Jesus I sound like the late Huel Hueser right now)
Coconut Oil Deep Fried Summer Squash
2 summer squash, cut into spears
1 cup coconut oil
1/2 cup buttermilk
1 tab hot sauce
Seasoning mix
1 1/2 cups flour
1/4 cups corn flour
2 tab chili powder
1 tab garlic salt
Mix the seasoning together on a paper plate.
Slice the squash thin and soak it in the buttermilk and hot sauce.
Heat the coconut oil.
Dip each piece of squash in the seasoning mix and fry each slice of squash in the hot oil.
Enjoy with plenty of cold beer!
