After a gorgeous fall day of hiking mountain trails and splitting and stacking half a cord of wood a big dish of hot delicious carbs sounds fantastic. But we try to ignore those amazing carbs in our household so how about serving up a a big bowl of southern Indian inspired cauliflower rice instead? If it’s late fall we might have a big red problem on our hands, and I mean about five pounds of glorious freshly grown organic tomatoes.
This fall we were left over a plethera of delicious ruby red tomatoes and I found myself throwing these vitamin C filled beauties into nearly everything. I made home made Tomato sauce like someones Italian grandmother (Link)
I made a great homemade tomato soup and obvioulsy we ate a ton of BLT’s. Oh and you have never had a delicious BLT until you slather it with avocado and this amazing ghost pepper ailo mayoniase.
Cauliflower Tomato Rice
8 tomatoes, roasted in the oven with 2 teaspoons olive oil and salt
2 cups riced cauliflower
2 teaspoons ghee
