You really can’t do keto all the time. And yes, we may usually live that keto lifestyle but beans are so good for you! I really do enjoy beans, even though they don’t seem to get along with my body well. I’ll admit that I have a little summertime obsession with this Rotisserie Chicken Nacho Cheese Dip. Sure, beans may be a magical fruit, but damn do I love this easy summertime nacho dip. If there is one summertime nacho cheese dip recipe, I love to share with friends and family when we have a Fourth of July barbeque or a Labor Day get-together, it is this Rotisserie Chicken Nacho Cheese Dip. This is so easy to make, especially if you have some tasty leftover rotisserie chicken on hand.
Let’s face it, nobody wants to turn the oven on in August, but you can actually create this easy rotisserie chicken dip in your crock pot or even the microwave. It’s that easy!
This past week, I escaped to the Eastern Sierra for some girl time with my favorite four-legged ride-or-die. It was one unforgettable week of dirt-smeared, badass hiking adventure, dog included. No malls, no manicures, just trail dust, questionable smells, and camping at its finest. And you better believe we packed some Rotisserie Chicken Nacho Cheese Dip.

We did real girl time: trekking 60+ miles through the Eastern Sierra, smelling like a mix of citronella and regret, basic cowboy camping because I forgot the sleeping bag and using pinecones for things I won’t discuss here.
Every summit? We crushed it. Every stream crossing? Wet paws and wet dog smell for days. Every evening? A luxurious combo of chili, more chili, some Rotisserie Chicken Nacho Cheese Dip. an

Rotisserie Chicken Nacho Cheese Dip
1 cup of shredded rotisserie chicken
1/2 cup good-quality tomatoes, chopped up
6 slices Velveeta cheese (I know, weird!)
1 cup shredded Mexican cheese blend
1/2 cup sour cream
1/4 cup pickled jalapenos, chopped
1 teaspoon garlic powder
1/2 cup of kidney beans
1/2 cup of white beans
Mix up all these zesty ingredients in your crock pot. Turn the crockpot on high for one hour. From there, you can just leave the crock pot on low until you are ready to serve this up.
So, what can you serve this Rotisserie Chicken Nacho Cheese Dip with? Tortilla chips, of course, jicama slices and radish slices are also great lower-carb options.
