But the true star of the Faire, beyond the cleavage and chainmail, is always the turkey leg. Giant, glistening, smoky, primal perfection.

And here’s the good news:

So why opt for an air fryer turkey leg recipe this Thanksgiving instead of roasting an entire 20-pound bird that requires the upper-body strength of a CrossFit champion just to get it into the oven?

Renaissance Faire Turkey Legs at Home: Air Fryer Magic Without the Bodices & Boobs

Because maybe you’re hosting an intimate Thanksgiving this year. Maybe you’re tired of hauling a brined behemoth home. Maybe you simply cannot face a holiday with twenty relatives who absolutely cannot be trusted to follow the “no politics at dinner” rule.

Turkey legs are easy. Flintstones-level easy.
And—bonus—they reheat beautifully when your post-holiday hunger returns at 10 p.m.

Now, full disclosure: raw turkey legs can be a bit of a quest. I find them most often frozen at my local Asian markets here in Southern California. Specialty grocers like Bristol Farms or Raley’s usually have them too, especially near the holidays. When all else fails, your local butcher—especially one who likes to brag about “primal cuts”—can often source them.

And now we arrive at my secret medieval or possibly spice route weapon:
Date Chutney.
I would bet my favorite corset you’ve never heard of it. But if you love spicy Indian food, prepare for your newest obsession. Date Chutney is often served with samosas and pakoras, but in this recipe, it transforms into a sticky, spicy, sweet glaze that makes your turkey legs taste like they were handed to you by a Renaissance Queen herself… or at least a very committed cast member.

How to Make Air Fryer Turkey Legs That Taste Like Ye Olde Festival

I use beef tallow in this recipe because RFJ Jr told me to, and if you can’t trust a man in jean shorts with a dead bear carcass in the back of his van, then who can you trust?

2 turkey legs

1 teaspoon ground garam masala

1 teaspoon grated fresh ginger

1 teaspoon grated fresh garlic

1 teaspoon salt

2 teaspoons beef tallow, melted (Yes, more animal fat!)

1/4 cup date tamarind chutney for glazing (Found at Indian markets or on Amazon)

Melt the beef tallow and mix in your garlic, ginger and garam masala. Spread this over your turkey legs with a pastry brush. Sprinkle salt over the turkey legs. Place in the air fryer at 350°F for 20 minutes. Baste the turkey legs with the chutney, then turn them over. Cook another 15 minutes. Serve these with Mint Chutney and Peach Raita dipping sauces.
