The surprise is not the gas you have after wards but all the tasty extras that come with this soup.
This recipe is so easy.
Latin Bean Soup
1 package Latin black bean soup (TJ’s)
2 cups brown rice (I use frozen)
2 ears corn, corn cut off with a knife
1/2 cup sour cream
1-3 limes
hot sauce
2 avocados
pepper jack cheese
In a large glass pan layer the cooked rice, the corn and the sour cream. In a separate bowl add some lime juice to the soup to taste. Pour the soup over the rice. Put the grated cheese on top. Bake at 375 20 minutes. Put slices of avocado on top of the baked soup and drizzle some hot sauce on top.
