And now I’m thinking: why doesn’t anyone sell WWRFKJRD bumper stickers and T-shirts? Luckily, ChatGPT came to my rescue.

We have all been there. St Patrick’s Day came and went, you are still dressed up in your favorite green romper and man, do you have a ton of leftover corned beef! It’s far to salty to mix in with the dog’s food. Just what do you do with all that Irish processed beef?

When St. Patrick’s Day Goes Keto: Reuben Coleslaw Edition

Come on, man. We are not just tossing cabbage in a pan over here. We are crafting a Keto Reuben Coleslaw with leftover corned beef like civilized low-carb adults who survived St. Patrick’s Day.

Reuben Flavor, Zero Bread: Keto Coleslaw Remix

1 small head of green cabbage, sliced very thin

1/2 a head of red cabbage, sliced very thin

1/2 teaspoon caraway seeds

1 teaspoon Kerrygold butter

1/4 cup Gruyere cheese, grated

1/2 cup cooked corned beef chopped into cubes

1/2 cup sauerkraut

4 sliced spicy pickles, I like to use Famous Dave’s Devil’s Pickles

4 pepperoncini peppers, sliced

1/8 cup Pickled Red Onions

Keto Reuben Coleslaw dressing

1 teaspoon ketchup

1/2 cup mayonnaise

2 teaspoons reserved pickle juice

1/2 teaspoon of horseradish

A squeeze of lemon juice

1/2 teaspoon of salt

1/2 teaspoon cracked pepper corns

1/4 cup Famous Dave’s Spicy Fire pickles, chopped into pieces ( Add just a bit of the pickling spices from the pickles)


How to Make Keto Reuben Coleslaw (The Right Way)

First things first: make your Keto Reuben Coleslaw dressing.

Add all dressing ingredients to a mason jar, screw on the lid, and shake it like you’re trying to burn off the carbs from all that green beer (Or wine!) St Patrick’s Day weekend.
