Mom’s Best Banana Bread, with some healthy changes
Spell check just tried to “Help me change the original name of these bars from Chia Coconut Banana Bars” to “Chow Coconut Banana Bars”
I would just like to say, no Chow’s were hurt in the making of these banana bars.
1/2 cup coconut oil
1 1/2 cups sugar
1 cup Greek yogurt
2 bananas, mashed
1 tsp vanilla
3 tab chia seeds
2 cups whole wheat flour
1 tsp baking soda
1/2 tsp salt
Mix the sugar, coconut oil (At room temperature) add the banana, Greek yogurt, vanilla and chia seeds. Add the dry ingredients.
Bake in a greased pan 20-25 minutes at 350.
8 ounces cream cheese, softened
1/2 cup butter (Or Earth Balance coconut oil spread) at room temperature
3 3/4 to 4 cups powdered sugar
2 tsp vanilla
In a mixing bowl beat cream cheese, butter and vanilla. Add powdered sugar until smooth.
Frost the cooled bars with this frosting.
