I wanted to make a healthier version, hence no deep frying, just a little coconut oil.
Also I was feeling lazy, therefore made them into quesadillas and not flatus.
Stacking is some how far easier than rolling.
Also everything tastes better when you dip it in jalapeno jelly.
Pineapple BBQ Chicken Quesadillas
4 corn tortillas
1/2 cup Colby cheese
1/2 cup goat cheese
1/2 cup carnitas
1/2 cup BBQ sauce
1/2 cup pine apple chunks
1/4 cup jalapeno jelly
2 tab coconut oil
Shred the carnitas with your fingers. Add the BBQ sauce and than the pineapple. Set aside.
On each tortilla spread a dab of goat cheese, a little shredded Colby cheese and a two tablespoons of the pork. Cover with another tortilla.
With a pastry brush, brush each quesadilla with coconut oil.
Put on a baking sheet.
When all the quesadillas are made, cook in the oven for fifteen minutes at 350.
