Here in 2026, healthy comfort food is all the rage. Well, this is not exactly that but when you burn 1,000 calories in one morning snowshoeing through the forest, sometimes a Beet Salad is just not going to cut it.

And who does not like to use up leftovers, but make them tasty?

Call it Cast-Iron Potato Omelette with Bacon, Cheese & Sweet Heat, this tasty Loaded Mashed Potato Skillet Omelette is the real deal.

This recipe came about when I decided to make croquettes from leftover mashed potatoes. I basically threw the kitchen sink of leftovers in there, smashed it into a patty, fried it up with some ghee and called it good. Wait, actually, I called it delicious. Definitely serve some dipping sauce on the side. I like to serve this with my Sweet Chilli Aioli.

This Trash-to-Treasure Potato Omelette

1 cup of leftover mashed potatoes

3 slices of bacon, cooked and crumbled

1/2 cup of grated leftover cheese

2 scallions, diced

3 teaspoons of ghee

3 teaspoons of candied jalapenos, chopped

1 teaspoon olive oil

Leftover pulled pork, brisket, Christmas ham, Thanksgiving turkey or any similar kinds of leftover meat.

In the mashed potatoes, gently stir in your candied jalapenos, diced scallions, bacon crumbles, any random chopped meats and the shredded cheese. Heat a cast-iron skillet while your oven preheats to broil. Into the skillet, throw your ghee. Mould in your leftover Kitchen Sink Potatoes, smash them really well and lower the oven heat just a bit. Cook them on the burner for about four minutes in the cast-iron skillet. Sprinkle your teaspoon of olive oil over the top of your “Omelette.” Put this in the oven and turn the broiler to low. Cook for 8-10 minutes until your Trash to Treasure Omelette is just browned on top.
