If it’s a Tuesday morning at six a.m. I’m probably sweating in our living room. It’s barely light outside but my boyfriend and I are already doing burpees and power squats while Sean T yells at us from the t.v. in the corner. At first the dogs are always confused by us jumping around like a couple of ding dongs while the sun has barely started rising above the pine trees in the back yard. Eventually they will grow tired of starring at us and fall back asleep while we continue to jump around and jog in place burning calories as our neighborhood is just beginning to wake up.
Let me just say that I completely adore lox cream cheese in all it’s fishy goodness. What I don’t adore is having to run or mountain bike extra miles because I inhaled cream cheese today. That is why this Greek Yogurt Salmon Spread is so awesome! I use mostly Greek yogurt for the creaminess in the spread and this is delicious! Plus the salmon puts a little added protein into your body after a good hard morning workout!
After a butt busting five hundred calorie burning Insanity workout this salmon spread with egg whites and wheat toast is such a delicious and healthy breakfast.
Now on to work out number two of the morning, quick five mile mountain bike ride in the forest!
I used this hot smoked salmon from Trader Joe’s. It does not come precooked so I baked it in the oven first for twenty minutes at 375.
Greek Yogurt Salmon Spread
1 salmon fillet (Smoked salmon is recommended) cooked
1/2 cup Greek yogurt
1/4 cup cream cheese
juice of 1/4 to 1/2 a lemon
1 tablespoon fresh chives
1 tablespoon fresh parsley
1 teaspoon salt
optional, 1/2 teaspoon ghost chili seeds or chili seeds
Combine the salmon, cream cheese, lemon juice, parsley, Greek yogurt, chilies, chives and salt in a nutria bullet until smooth.
Than spread on everything; crackers, snap peas, cucumber slices or toast.
