Grilled Veggie Omelet with Hollandaise Sauce and Goat Cheese

   After I do a long morning run, nothing tastes as great as this healthy veggie omelet on an empty stomach.

Grilled Veggie Omelet with Hollandaise Sauce and Goat Cheese


1 small sliced red onion
6 asparagus, cut into pieces
6 crimini mushrooms, sliced
1 tab coconut oil
1 tsp garlic salt
4 eggs
1 tab Greek Yogurt
3 tab goat cheese
3 tab Hollandaise sauce
hot sauce

In a sauce pan cook the veggies in the coconut oil. Add the garlic salt.  Mix the eggs and the Greek yogurt. After the veggies have grilled for five minutes mix in the eggs. Let cook a few minutes than flip. Top with goat cheese. When the other side finishes cooking remove the omelet from the pan. Top with a dab of Hollandaise Sauce and some hot sauce.

    I love greek yogurt but how do it do i neggs? Would it be good w/o hollandaise cause i hate hollandaise but veggie omelets are yummie! Especially with the eggs you and I buy the omega 3 super dark yolk ones 🙂
