After a morning spent snowshoeing, I’m ravenous for a low-carb lunch by noon. Thank God for low-carb pizza choices. The best part of this low-carb pizza lunch is you can have a different low-carb pizza every day of the week!
I will totally admit I am a huge pizza snob. In my world, a good quality wood-fired pizza is very hard to find. So I might as well just give up and toss that carb-filled crust out the window! Yes, this pizza is crustless. Yes, it’s basically a cast iron skillet full of cheese. Your welcome!

There are so many different ways you can create a low-carb pizza lunch. This is just one of my favorites. The two best parts of this low-carb lunch are that it can be assembled and baked in the oven in ten minutes. Also, it’s mostly cheese. Did I mention cheese? It is my second favorite food group. When you have been out snowshoeing all morning and you are ravenous by lunchtime; This is the low-carb pizza solution.
The most important part is to layer your cheese on the bottom. Use a cast iron skillet for baking so you get the perfect crust. You can even do this as a delicious breakfast pizza for a brunch treat!
The Best Low-Carb Pizza

8 slices good quality mozzarella
15 slices of pepperoni
1/4 cup crumbled feta
1/4 cup cashews
1/4 cup peppercines
1/4 cup sliced black olives
1/2 cup of your favorite pizza sauce
In a cast iron frying pan, layer your mozzarella cheese on the bottom. Add on the pepperoni slices, then the cashew, the peppercines and the black olives. Dollop the pizza sauce on at the end. Bake on high broil for 6-10 minutes, just until the pepperoni is cooked. When you remove the low-carb pizza from the oven, allow the low-carb pizza to sit for two minutes. Then slice the low-carb pizza with a pizza slicer.
