Sweet, Spicy, and Keto: Sriracha Bacon Jerky You’ll Hoard

There is no better breakfast snack while out for a fifteen-mile morning hike than Keto Sriracha Jerky. You may not be able to enjoy bacon and eggs on the trail at over nine thousand feet. However, you can have a tasty and spicy bacon snack from a ziplock bag. Does cold bacon at nine a.m. not sound like your thing? It will be when you are halfway through sweating up a mountain and on the way to burning over three thousand calories in a single day. Trust me, I’m a hiking guide!

As Big Bear Lake’s premier outdoor enthusiast, I know the most gorgeous and most strenuous hikes in the Big Bear Valley by heart. I will be hiking all of them in the next three weeks as I train for a fourth summit of Mt Whitney, the tallest peak in the continental United States.

Work hard, eat healthier!

Training for a hike like Mt Whitney means you have to work hard and eat healthy! Yes, that means cutting out fast food, fried food, alcohol, sugar, white flour and unhealthy carbs. The Keto lifestyle is your friend when you are training for Mt Whitney. But just because you can’t shove curly fries or Jalapeno Nachos with Tri Tip at your face does not mean you can’t have a delicious keto good time. Have you ever been lucky enough to try Sriracha Jerky? When my boyfriend and I first began dating over eleven years ago, store-bought Sriracha Jerky was our reward at the top of every vigorous hike. Until our favorite store-bought Sriracha Jerky was discontinued years ago! What is the Hungry Mountaineer to do?

Come up with her own wholesome, low-carb, zesty version of course! You have not lived until you have had a breakfast snack of this Keto Sriracha Jerky at the top of a ten-thousand-foot mountain! This beef jerky is so easy to create in your own air fryer at home. And come on, between taring for a twenty-four-mile, going to work, cleaning my extremely furry and fluffy house, who has time for a complicated keto beef jerky recipe?

This time of year, I do training hikes throughout the Big Bear Valley. The Sugarlump Loop is one of my favorites. Sugarlump takes you through the Bear Mountain Ski Resort, and it is just gorgeous in the early summertime. My puppy loves it too! San Gorgonio or bust!

Mt Whitney would tower over San Gorgonio but San Gorgonio is a great training hike for southern California. Whenever we are prepping to hike Mt Whitney, our goal is to summit San G, or ‘Ol Greyback as she is known to her friends, at least twice. San Gorgonio is basically an all-day hike. You start at dawn and if you hike at a good pace, you are back down at your motorhome with a celebration beer by happy hour. That is always the plan anyway.

Making your own at-home beef jerky is much easier than you would think. Sure, you could use a food dehydrator. I no longer own one, so I make this Keto Sriracha Jerky in my air fryer. You can also do this in an oven, set on the lowest temperature for hours. However, I do not recommend that in the summer months. Who wants to heat up their house in July with the oven on all day?

Sizzle, Spice, and Everything Keto: The Ultimate Bacon Jerky

Be advised that you can create this most delicious spicy yet sweet jerky with cheap flank steak or round roast. Okay,really, you can use any type of beef for this easy air-fried Keto treat. I recommend purchasing some thinly sliced meat. Some butchers will even cut round steak super thin for you. This is a great option as well. I buy the very thinly sliced beef from my local Asian market. I’ve made this with beef, and I’ve made it with short ribs. I’ve even made it with lamb. All are fantastic! I use Swerve brown sugar sweetener. Feel free to use the fake sugar keto sweetener of your choice.

Keto Sriracha Bacon Jerky

1/4 cup Swerve brown sugarFree Photo Of Bacon Stock Photo

1/4 cup Sriracha

1/4 cup soy sauce

2 teaspoons fresh grated ginger

2 teaspoons fresh grated garlic

Combine these five ingredients in a ziplock bag. Add your meat of choice and marinate for at least half a day. Set the jerky in your air fryer in a single layer and roast at 180. Roast for 30 minutes or until dried completely. Save in a ziplock bag. I do keep mine in the fridge or freezer, only because I don’t use any fake preservatives in mine.
