Ugg Boots, your favorite fall sweater, a ridiculously priced cardamom and cinnamon flavored latte…All these things sing out the joyous songs of autumn to me. I guess I am really just obsessed with autumn because it means summertime is over and I can finally stop sweating. It’s a great time of year to start baking again also and I always start with these breakfast treats, Keto Pumpkin Spice Donuts.
I’m ready for some fall weather already!
Here in this southern California mountain town, man, we have an intensely warm early autumn. Now that November is on the horizon, I have finally packed up my summertime rompers for the season and unpacked my autumn boots. I might have a problem. Please don’t ask me how many pairs of boots and booties I own. I really don’t want to talk about it. Thank God I’m obsessed with thrift store shopping or my boot fetish might put me in the poor house!
I’ve spent a lot of time this early autumn trekking around the forest with my pup. The fall colors have just been glorious so far. I have to admit, I have taken so many photos. Yes, I have a boot obsession and a photo-taking obsession this autumn. One could have worse vices!
A Pumpkin Spice good time
Like being addicted to these Keto Pumpkin Spice Donuts. I have to admit, these donuts are so easy to create, thanks to my air fryer. Every morning when the pup and I hit the trail for a hike, I have these babies in a ziplock bag in my backpack.
Nothing says hello October like throwing up a bug. At least that is what I was thinking this early October morning as I tried to find some zen trekking through the forest. Until I swallowed a fly. You know what tastes delicious and is not a bug? Donuts! But when you live the keto lifestyle can you really enjoy donuts? I swear, you really can! And what tastes better than a regular donut? Keto Pumpkin Spice Donuts of course.
If it’s early November then that means it’s time for my liberal family members to yell at me about how wrong I am. Of course, it is! As a conservative woman, yeah, I just can’t stand behind Kamala. And I will tell anyone who will listen why.
My soapbox, fall edition
I really don’t know what is going on today in this world we live in. This world has fallen in love with Kamala Harris, a woman who is supposed to be a good role model for young girls but has spent her career sleeping her way to the top. Hey girl, it’s not shattering the glass ceiling when you have, I was the mistress of an old man twenty years my senior, highlighting that resume.
I want to be in a good mood…
I simply adore fall. It usually brightens my spirits when the leaves turn all shades of orange and yellow. But this year is different. The world around me seems like a terrible place. Natural disaster, litter all over our mountain trails, idiots on the way to the White House…Oh and also the world and the forests are burning down all around me. I may be in a bit of a negative mood when our national forest, our home, and our livelihood are burning to the ground in a 40,000-acre wildfire over sixty miles wide. And why the fuck is the forest full of bugs? This is not springtime! We rarely get insects here in Big Bear Lake, California. I don’t know why the flies were fierce as I attempted to sweat out some keto-baked desserts this a.m. along with sixty billion flies.
Keto Pumpkin Spice Donuts
Yes, I call these donuts but I actually create these Keto Pumpkin Spice Donuts really like donut holes just because it’s easier.
2 teaspoons pumpkin puree
1 1/2 cups almond flour
1/2 teaspoon vanilla
2 teaspoons vanilla sugar-free protein powder (I prefer Thrive brand)
2 teaspoons mascarpone cheese (You can also use Greek yogurt)
1 teaspoon Pumpkin Spice Powder
Combine all ingredients. Roll into balls and cook in your air fryer
If you like them sweater, mix equal parts cinnamon, sugar-free protein powder and dredge your cooked Pumpkin Balls in just a bit of coconut oil then roll them in Cinnamon “Sugar” before serving.
