Keto Gluten-Free Dark Chocolate Cake

Yes, here in Big Bear Lake California, it’s a Keto AF Valentine’s Day. I haven’t had a carb in so long that I’ve forgotten what real sugar tastes like. These days if I’m allowing myself dessert it has monk fruit or Swerve in it. I never thought I would be able to enjoy any of those fake sugar substitutes but it’s February 2024 and here I am, chock full of erythritol. I’m not a fan of ingesting ingredients I can barely pronounce but three months with no carbs in your life makes you do bizarre things. Here it is February 14th once again and I was searching for Valentine’s Day dark chocolate desserts without sugar or gluten. Wow, did I come up with a winner!

Ten years ago I found the best thing on the Internet and no it was not TikTok. As my boyfriend and I look forward to celebrating our tenth Valentine’s Day together, yes we will be doing it without carbs or gluten. And by doing it, I mean shoveling some Gluten-Free AF Dark Chocolate Cake at our faces. Valentine’s Day dark chocolate desserts do not mean you have to get off your 2024 diet.

Decadent Valentine’s Day dark chocolate desserts

The tenth-anniversary gift is sugar-free chocolate, right? In our ten years together we have traveled to amazing worldwide locations like Bangalore India, Venice Italy and Toronto, Canada.  This February 14th we are celebrating Valentine’s Day with a little snowshoeing in our backyard with our love child, this wild Catahoula dog.  Our baby might have terrible doggy breath but damn-it do we love her.Valentine's Day dark chocolate desserts

This Valentine’s Day 2024 Mother Nature has bought us the gift of many feet of fresh snow and that means lots of snowshoeing shenanigans in the wilderness we call our backyard.

Keto Gluten-Free Dark Chocolate Cake

2  cups almond flour

1/2 cup of coconut flour

1 cup monk fruit for baking

1 teaspoon vanilla

1/4 cup salted butter, at room temperature

1 teaspoon baking soda

1/2 a teaspoon of salt

2 eggs

1 cup of sour cream or Greek yogurt

1/2 cup of Hershey’s Extra Dark chocolateFree Close-Up Photo Of Chocolate Cupcake On A Rectangular Plate Stock Photo

Beat the monkfruit powder and butter. Mix in the vanilla and the sour cream. Add in the eggs and then the dry ingredients until mixed well. Bake at 350 for 20 minutes. Set aside the cake to cool.

For the Keto AF Chocolate Frosting

3 teaspoons monk fruit powder

1/4 cup salted butter, at room temperature

1 teaspoon vanilla

1 teaspoon heavy cream

3 teaspoons Hershey’s dark chocolate powder

Melt the butter and stir in the Hershey’s chocolate powder. As it cools, stir in the monkfruit, and then the vanilla. Put this in the fridge until it solidifies. After it is once again solid, remove it from the fridge and let it come back to room temp. Add the cream and beat this in your stand-up mixer, just until whipped and frost your cupcakes.
