As a always hungry foodie summertime can be a frustrating season. Man, I could go for a hot slice of cornbread with honey right now. But alas I won’t be baking cornbread until the fall when I get brave enough to turn my oven on again. The dog days of summer are not a great time to be baking. But they are a great time to barbeque! Keto Jalapeno Poppers are some of my favorite barbeque-involved treats.
Summertime is a great season to do all the most scenic hikes Big Bear Lake has to offer. Of course, if you have no idea what those hikes are, you might want to hire a local hiking expert for the day! My boyfriend, our pup and I trekked up to the top of Sugarlump, a trail that is a local’s secret. I’ve hiked here the last two days and even on a weekend did not see a single other hiker all morning!
I’ve trekked to the top of Bear Mountain at 8,440 feet many times. I’ve only done the Sugarlump loop a few times, but my God, were the wildflowers amazing back in this hidden area of Big Bear Lake this week! I’m not usually a fan of trekking the same trail day after day, but I just can’t get enough of this trail right now! My boyfriend and I are currently training for our annual trek up Mt Whitney at over 14,000 feet and the whole Bear Mountain Ski Resort is a playground of beautiful unpopular trails. As a hiker who likes to trek far from the beaten path, I have so been enjoying these hidden hikes! We saw more deer on the trail this a.m. than people. I am so okay with that!
Here we are five weeks out from our trek to the top of the highest peak in the continental United States and last week even with a slightly hurt knee, I hiked more than thirty-five miles. Half of that was probably my work day! Not bad for our first official week of training but we have a long way to go. The key is to work hard, train hard and not get hurt. Easier said than done as you get older!
The beauty of the trail choices we have to offer here in Big Bear Lake keeps me highly motivated to hike every day. And thank the Lord, this heat dome hanging over southern California has finally lifted and we are enjoying some afternoon thunderstorms at last! Yes, it’s more humid on the trail and I may not be a fan of humidity but these thunderheads make for picture-perfect views, especially from the top of some of the highest peaks in southern California. I think I probably took around two hundred photos the last few days, that’s how beautiful of an area we are blessed to live in here in our alpine town.
After a full summertime day of trekking to the top of both of our ski resorts here in Big Bear Lake in one giant hike, I am craving some Keto Jalapeno Poppers by lunchtime. But do I want to heat up our home? Hell no! There has to be a better option than turning on the oven! Let me tell you all about how to make these super easy Keto Jalapeno Poppers.
We are blessed to have an outdoor burner on our barbeque and we so take advantage of that June through August. I make my famous Anglo-Indian Paleek Paneer completely outdoors on the bar-be-que. Anytime we are craving bacon As keto-fanatics, yes that is usually twice a week at least, it’s always prepared on the barbeque outdoors. Thank God for Costco bacon. As someone who lives over an hour from the closest Costco, I buy an embarrassing amount of bacon every two months. Yes, I might throw four packages of bacon, two Costco-size bundles of eggs and at least a vat of organic grass-fed ghee in my Costco Gordo buggy anytime I walk into the Costco warehouse.
Yes, I use pre-made crab dip for these Keto Jalapeno Poppers but you can absolutely make your own crab dip, especially if you live in an area where you can purchase fresh crab. I buy the crab dip at either Stater Brothers or Von’s Grocers here in southern California.
Keto Jalapeno Poppers in the air fryer
Thank God and my amazing boyfriend for this air fryer! He purchased this air fryer for me a few years ago as a birthday gift. I use it multiple times a week. I make the best Lamb Burgers in it. I quickly air fry the chicken for my favorite easy lunch, Buffalo Chicken Salad with Blue Cheese Dressing using the air fryer. This air fryer saves me in the summertime months from turning on my oven. And it makes it just so easy to create Keto Jalapeno poppers without heating up my house.
When I create these for a crowd I’ll put them in one of those foil disposable pans and finish them on the barbeque. If I’m just making a few of them, I finish them up in the air fryer.
Keto Jalapeno Poppers Stuffed with Crab Dip
6 jalapenos, roasted for 12 minutes at 375 in your air fryer
1/2 cup of your favorite crab dip
4 slices bacon, cooked and crumbled
THAT’S IT!
On a large sheet of foil, lay your jalapenos, and slice them in half. You can remove the seeds if you want your Keto Jalapeno poppers less spicy. Fill the Keto Jalapeno Poppers to the brim with crab dip. Sprinkle them with bacon. Wrap the Keto Jalapeno Poppers up well in the foil and cook them in the air fryer at 375 for nine minutes.
Low-carb, gluten-free, Keto Jalapeno Poppers are served!
