Turkey Club with Spicy Aioli Keto Lettuce Wrap

Here we are in week one of January and it’s all keto all the time in our house. I have been buying a shit ton of bacon, iceberg lettuce and avocados. Christmas cookies, are a thing of the past!

I have been trying for years to master the art of wrapping a protein burger or a lettuce wrap. I finally found a link on the YouTube that explains it so that my dyslexic brain can understand! Yes, it took some patience and some practice but take my advice; Buy the iceberg and parchment paper, load it up with your favorite sandwich toppings and make lunchtime great again!

Once I learned how to make my own lettuce wraps, my how suddenly my keto world changed! No more chopped keto salads for lunch every day; Hello keto wraps of every kind! The secret is iceberg lettuce. Yes, it’s not a healthy lettuce like spinach but you can’t easily make a wrap with spinach. And I’m just not a fan of Swiss chard as a wrap. So here we are; With me purchasing at least three heads of romaine every time I go to the local mercantile.

When I was a kid, my dad taught me that the way to remove the “Butt” from the iceberg lettuce, is to slam the iceberg on the counter, thus loosening the “Butt” Now this is a pretty violent way to create a keto wrap. Let’s face it, we are all a bit angrier without carbs in our lives, but still, we don’t need to manhandle our sandwich ingredients.

So just how easy is it to make a lettuce wrap at home?

  • Cut your iceberg in half. Remove the stem part with a knife.
  • Lay out your parchment paper in a diamond shape.
  • Pick out the best lettuce pieces. Cover your parchment paper in a thin layer and then you can start layering your toppings. Basically, cover the entire parchment paper in the lettuce. The more lettuce you use, the easier it will be to build your wrap later. And come on, all those veggies are very low in calories and good for you!
  • When you layer on your other ingredients, leave space on the edge of your lettuce for the roll up process.

  • They say you have to use iceberg for this but I find you can do it with a head of butter lettuce or a head of romaine or green leaf as well.

roasted turkey

baby swiss cheese

pickled red onions

pickled jalapenos

avocado

Cooked bacon slices

sprouts

Parchment paper

Easy Spicy Aioli

3 teaspoons mayonnaise

3 teaspoons Greek yogurt

3 teaspoons sriracha

3 teaspoons sweet chili sauce

Combine these four in the food processor. This leftover sauce will keep for 2 weeks in the fridge.
