Is it a cookie? Or is it a delicious and healthy breakfast sandwich? When it comes to that old favorite the peanut butter cookie I am beyond picky. I won’t usually buy them because I am just so particular about what a chewy moist peanut butter cookie should taste like. On the other hand, aside from the perfect peanut butter cookie, I’m really not a fan of peanut butter. I always grab the jar of almond butter if given a choice. So why would I add cheap Skippy peanut butter to a cookie when I could add macadamia nut butter?
I have been asking for so many years why are there not more almond butter or macadamia nut butter items on the market. For the last fifteen years, I have been making my own almond butter cups (Reese’s peanut butter sugar-filled cups my ass). Finally, the health food world has caught up with me and you can buy almond butter chocolate candies from Sprout’s markets to Trader Joe’s. What the hell took so long?
As a long-distance hiker and a camper as well what I fuel my body with is so important to me. That is why I am all about almond butter. I’m all about healthy, yet delicious meals that are easy to put together on a camping trip for a quick breakfast pre-hike or when I’m starving after a 12 mile hike and return to camp. The great thing about trying to create the absolute best macadamia nut butter cookie on earth is if they taste bad, I can feed the duds to my pup! One great thing about having a dog; I don’t waste as much food. If it’s healthy and dog-friendly, she gets a limited amount of leftovers.
To dog or not to dog. An age-old question
- What don’t I like about having a dog? Sweet Jesus the dog hair. I take this adventure pup everywhere with me and she sheds all over my car. It’s disgusting.
- She gets the dog farts, especially now that she’s old.
- She’s kind of an asshole. I just had to pay over two hundred dollars for a new replacement phone after she knocked my phone over on a rock while I was hiking. That completely destroyed the side of my phone.
But you know what? She is my Norwegian Forest Cat’s best friend. So there is that. Leo the Lion/forever kitten just loves this smelly old lady. (The adventure dog, not me)
If it’s a Tuesday morning in late August, the kids might be back in school but you can find me and my trail dog on the trails of the eastern Sierra. The cats might be fine companions but I can’t take them hiking with me. So I guess the dog wins. I guess she really is man’s best friend as much as I hate to admit it. That’s why I need to drown my sorrows in macadamia nut butter cookies if this is an ugly mutt is my best friend.

For the most delicious nut butter cookies ever you can really substitute your favorite nut butter, whether it is peanut butter, almond butter or macadamia nut butter. The Best Nut Butter Cookies Ever Created
1/2 cup flour
1/2 cup organic sugar
1/2 cup organic brown sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla extract
1/2 cup good quality peanut butter, Not Jiffy for the love of God!
1/2 cup Kerrygold unsalted butter, soft
1 egg
Preheat the oven to 350. Cream the butter, sugars, vanilla and peanut butter. Mix in the eggs and then the dry ingredients. Form the dough into small cookie balls the size of a quarter. These cookies will spread quite a bit so you want to make them small. Bake these for eight minutes.
Make the macadamia nut butter filling
1/2 cup good quality peanut butter or nut butter, Put down the Skippy crap!
4 teaspoons powdered sugar
1/2 teaspoon vanilla
Mix all three ingredients in a bowl. Let the cookies cool for an hour after baking. Spread some nut butter filling in between two cookies.
Dunk these macadamia nut butter nutty babies in the milk of your choice or just shove them at your face!
