Today my only problem in life was the fact that I had no cash and I needed to get in my bet at the sports book before noon.
I was laying out by the pool at Marquee day club; racing form in one hand and a pineapple rum drink in the other and life was good.
Than I realized that my Tvg account was empty.
It was thirty minutes from post time; I had not brought my debit card with me to the day club and I didn’t know what I should do;
Put on my cover up and walk outside the club to the sports book and try to lay a bet with my credit card or order another drink and maybe a Thai feta and pineapple pizza.
I orders the pizza ( and another rum drink)
And I had three out of the four winning horses eventually in the super fecta.
You win some, you lose some.
This is my version of the Thai chicken pizza from the Cosmopolitan’s Marquee Day Club

Veggie Thai pizza with Feta Cheese and Pineapple
3/4 cups Peanut sauce ( I like Trader Joes Thai peanut salad dressing
1/2 cup crushed Pineapple
1 tab Parsley
1 tab cilantro
1/4 cup shredded Carrots
1/4 cup Micro greens
1/4 cup Fresh Parmesan cheese, shredded
1/4 cup feta cheese, crumbled
2 frozen pizza crusts, I like Trader Joes ones
On the pizza crust layer
Slather the Thai peanut sauce on the pizza crusts.
Add the feta, carrots, and pineapple.
Cook the pizzas for about twelve minutes at 375.
Take the pizzas out of the oven and add the fresh parmesan cheese, parsley, cilantro and micro greens.
