When I am out every winter snowshoeing up mountains, I’m really thinking about having all the ingredients at home in my mountain kitchen for keto pizza. This morning the pup and I did a real butt-busting snowshoe workout; We snowshoed straight up to Onyx Peak, one of the highest peaks in Big Bear Lake. Why, yes, I did dream about keto pizza the whole time!
I’ve been addicted to keto pizza all week long. I have about six different ways I make my keto pizzas. Each one is incredibly delicious. If you are a fan of barbeque chicken pizza, then you will love this zesty keto pizza treat. It’s hard to enjoy barbeque chicken during the snowy winter months. If you, like me, are missing a barbeque chicken lunch, this will satisfy your cravings!

This keto pizza is to New York Style Pizza what Beyounce is to country music. Yes, if you are a New York or Chicago-style pizza fan you might find my pizza style insulting. However, my life is carb-free these days. This keto pizza helps me stay in ketosis. After a winter’s morning of snowshoeing and trying to get in a sweaty workout on a forty-five-degree morning, I’m dying for a slice of keto pizza, dripping with barbeque sauce and cilantro by lunchtime.
- Use your favorite barbeque sauce here. If you have a keto favorite barbeque sauce, definitely use that! I have not found a keto barbeque sauce yet that I can handle the monk fruit flavor in it. Have you? If you have, please mention in the comments!
- If you don’t have time to make the pickled red onions, feel free to use diced red onions.
- Don’t skip on the cilantro. It really makes this dish pop.
- Am I the only one who loves cashews on my pizza? How can you have pizza without cashews?
Keto Crustless Barbeque Chicken Pizza
A cast iron skillet
1 cup shredded rotisserie chicken
8 slices good quality sliced mozzarella cheese
1/4 cup good quality barbeque sauce
1/4 cup crumbled feta cheese
1/2 cup Mexican blend shredded cheese
1/4 cup cashew pieces
1/4 cup peppercine slices
6 sprigs cilantro, chopped
In a cast iron frying pan, layer your mozzarella cheese on the bottom. Add on the feta cheese

and the Mexican cheese blend. Add on the rotisserie chicken. Drizzle the barbeque sauce onto your keto pizza, then the cashews and the peppercines. Bake on high broil for 6-10 minutes, just until the cheese are melted. When you remove the keto pizza from the oven, allow the keto pizza to sit for two minutes. Then slice the keto pizza with a pizza slicer.
