Nothing says fall like pumpkin.
Is there really nothing better for breakfast than waffles?
Or French toast?
What if I combined the three!
Such a genius idea!
What if I made them gluten free and yet full of protein and fiber?
These waffles are genius and oh so delicious on a crisp autumn morning.
Gluten Free Pumpkin French Toast Waffles
For the waffles
1/2 cup pumpkin puree
1/2 cup coconut flour
1/2 cup hazelnut flour
1 tsp baking powder
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1/2 cup buttermilk
1 egg
1 tsp vanilla
2 tab raw honey
1 tab coconut oil
For the French toast
3 eggs
1/4 cup Greek Yogurt
1 tsp cinnamon
1/4 cup coconut oil
3 tab maple syrup
1 tsp powdered sugar
Mix the 1 egg, pumpkin, honey, vanilla and melted coconut oil. Add the spices than the flours, and baking soda.
Mix in the buttermilk.
Oil the waffle maker with coconut oil and cook waffles in the waffle maker.
When all the waffles are cooked and cool enough to handle mix the three eggs, Greek yogurt and cinnamon.
Dredge the waffles on this and fry in the coconut oil.
Serve with maple syrup and honey.
