Gluten-Free Chocolate Mouse Brownie Cake

If it’s Valentine’s Day then I might just OD on chocolate. I mean ask me what I want for Valentine’s Day. I want to snowshoe with my dog and then shove a chocolate dessert at my face. My Valentine’s Day needs are quite simple. If it’s Valentine’s Day 2025, oh God, do I need some chocolate in my life! What the hell did Donald Trump do today? I guarantee that gluten-free chocolate desserts might help keep you sane here in 2025! This is one of my fav gluten-free chocolate desserts.

Life is always stressful. Here in 2025, it seems the stress is neverending! Whether it’s work problems, asshole friends and family or maybe just an ashole pet who keeps jumping on the counter and stealing all your keto diet-ready bacon, chocolate desserts are a great way to de-stress. If it’s coming down to the second week in February, don’t you deserve some gluten-free chocolate desserts?

I swear just yesterday it was early January. I was trying desperately to detox from all the holiday deliciousness I shoved at my face. And now, it’s suddenly Valentine’s Day! Chocolate desserts are staring me in the face everywhere I look.

Living this gluten-free mostly keto lifestyle can be a tough one when you just love desserts. Gluten-free chocolate desserts are easier than you would think to create. Thank God for almond flour. It helps me with all my gluten-free chocolate dessert baking needs. I feel like almond flour plus coconut flour are the gluten-free flours of choice. This combination can make all your GF baking needs turn out amazing.

 

If you start out with a pre-made brownie mix, this is a very easy dessert. Trader Joe’s gluten-free brownie mix is great. However, if you feel like making the brownies from scratch I did include my from-scratch gluten-free brownie mix full of almond flour and almond butter.

Chocolate Mouse Brownie Cake

Your favorite Gluten-free brownies Trader Joe’s has a great Gluten-free brownie mix

10 Dark chocolate gluten-free sandwich cookies, broken up

3 teaspoons salted butter

The Chocolate Mouse layer

1 cup dark chocolate (broken into pieces)

1/2 cup mascarpone cheese

Zest of half an organic orange

Melt the chocolate over a double boiler.

Let cool slightly.

Whip the mascarpone and the orange zest. Fold in the melted chocolate. Chill for at least thirty minutes and set aside to top your gluten-free cake.

For the cookie crust, crush up your gluten-free cookies in a food processor with the butter. Line a baking dish with the cookie crust. Put your mixed-up brownie batter on top and cook according to the directions from your brownie mix. Set the cake aside to cool for at least thirty minutes. Spread your chocolate mousse on top. Set in the fridge to cool for 20 minutes.
