How do you celebrate Easter if you hate ham and also are on the Keto Kraze? Eggs Benedict salad is the way to go!
It’s now day six of our personal Keto Kraze and I’m starting to think keto is just so flat out stupid. ( But that could be because I’m grumpy from not having any wine or sugar for six days) I have happily inhaled a ridiculous amount of cheese in the past six days but I just can’t see how this new diet craze is healthy for me and my lifestyle in the long run. As much as I love me some cheese, any cheese all the time I just don’t feel good inhaling cheese three meals a day.
And also I’m tired of putting butter in my coffee.
Plus, I don’t feel like eating a desert that is basically just drinking whipping cream. This Keto Kraze is making my heart hurt and I swear I can feel my arteries clogging and eating nothing but fat and butter and all the cheeses can’t be good when you mountain bike, until you feel like your cheese clogged heart, will burst. (Like I did yesterday) April means trying to get back into shape and attempting to get out and mountain bike more. I mean that is on the few April days we get that are not ridiculously cold and windy. Every April I think I feel like this. I start to feel like spring will never truly be here. I try to get out on the mountain bike anyways and the spring days while freezing cold and windy sometimes are gorgeous in our mountain town as I ride past snow ponds built in the days of gold mining in our mountain resort town.
Today before work, I literally wrapped rolled cold cuts and cheese in plastic wrap and threw that in my blazer pocket for a quick at work snack when I took my break. How can the human body consume this much meat and cheese I thought pulling my meat roll out of my pocket in the break room.
I feel like I have salami and bacon smell leaking out of my pores! But before I quite the Keto Kraze cold turkey here it is almost Easter and here in the perfect brunch keto friendly salad.
Eggs Benedict Salad with Chipotles and Proscuitto
3 eggs
1 teaspoon vinegar
1 teaspoon fresh dill, chopped
1 package prosciutto, chopped
6 asparagus, chopped
1 can crab, drained
Piracy the eggs with vinegar and set aside. When cool, cut the eggs into quarters. Layer in a salad bowl with the other salad essentials.
Chipotle Hollandaise Sauce
6 eggs yolks
1 teaspoon chipotles from the can with 1 teaspoon reserved tomato sauce
2 teaspoons butter
1 teaspoon Meyer lemon juice
1 teaspoon fresh parsley
1-2 teaspoons water
Combine all in a food processor. Drizzle this dressing over the salad ingredients.
