Tragically my organic CSA box today had no green beans in it. No problem I thought and I turned my plans for a green bean casserole into a turnip casserole.
If you get turnips in your CSA and you have no clue what to do with them ( as I did!) they are also great roasted with lemon and honey.
This is a small batch, feeds about 2-3 people
Cheesy Swiss Turnip Casserole
1 bunch turnips, chopped into bite size pieces
1 tab olive oil
1 tsp onion, chopped thin
1/2 tsp chili powder
1/2 tsp salt
1/2 tsp fresh nutmeg ground
1/2 cup grated Swiss cheese
1/4 cup fried onion pieces
In a sauce pan cook the turnips and the onions in the olive oil for ten minutes until slightly browned. Add the chili powder, salt, and nutmeg. Cook one minute more.
In a casserole dish layer the turnips, Swiss cheese and the fried onion pieces. Bake at 375 for fifteen minutes until the cheese is bubbly.

Sounds great. I am going to cook artichokes and the other vegetable tonight is Cauliflower……With Dave on a vegetarian diet I need to stay away from cheese 🙁 That said, I will get back to you on what I decide to do. Unless, you have something that might do the trick.
