Jalapeño Popper Chaffle

By Amber Woods on Tuesday, December 10, 2019

We eat spicy delicious treats like jalapeno poppers in our household most every day. So that means heading to India for ten days has us upping our spice content and getting ready for some seriously spicy food. We are trying to train our palettes and our stomachs, here comes curry! Some people go to the …

Seared Scallops and Mushroom Keto Cauli Risotto

By Amber Woods on Friday, December 6, 2019

It may be the day after Thanksgiving but it’s beginning to look a bit like Christmas outside our snowy mountain door. Yes, yesterday was thanksgiving I did gorge myself on Butter Chicken and Sweet Potato Pie but I may just be craving risotto today. I mean, I did just shovel three feet of snow in …

Mascarpone Sweet Potato Pie with Candied Ginger and a Gingersnap Crust

By Amber Woods on Wednesday, December 4, 2019

Once upon a time, I worked until eleven-thirty at night. Then I drove forty minutes home. Then I stepped in cat puke. Than I got in bed. Than I realized I had stepped in cat puke. My alarm was set for four-thirty, so I could be back at work by six A.M. and in that …

What the Hell’s a Chaffle?

By Amber Woods on Sunday, December 1, 2019

The first time I heard the term chaffle it sounded like something that would happen if I rode my mountain bike too long. Let me tell you, a chaffle has nothing to do with chaffing and everything to do with cheese. A waffle chock full of all the good cheeses? Sign me up! I just …

Acorn Squash Gluten-Free Waffles

By Amber Woods on Tuesday, November 19, 2019

To some people, autumn might mean sports ball and pumpkin spice lattes (maybe not at the same time.) If you ask me, autumn tastes like acorn squash with the smells of wood fires in the chilly air. Autumn means cold temperatures not minty degree days like when I journeyed to Orange County to Christmas shop …

About Me
Amber Wood
Amber Wood

Hi y’all! I’m Amber, Big Bear’s local Hungry Mountaineer hiking nature guide. I grew up here in the San Bernardino National Forest and I have basically been out exploring hiking trails and enjoying the wilderness as long as I could walk. I have had some amazing adventures out here in the gorgeous San Bernardino Mountains over the years. As a hiking guide who is passionate about the wilderness, I love to share my knowledge of our vast trail system with vacationers who also love the great outdoors. Looking to book a hiking excursion? Email me at Hungrymountaineer@gmail.com for the best locals-only hikes available in this mountain wilderness. I am passionate about finding my balance in life – healthy living, great food, outdoor fitness, traveling adventures, working hard and my unbridled love for racehorses and naturally, gambling. When I’m not exploring news trails or betting on the ponies you can find me either coming up with healthy new recipes or blogging about the adventures my trail pup and I had in the wilderness this week. I have spent most of my life exploring what these mountains have to offer and locals would call me an expert. I know the best hiking and biking trails in these mountains and I have chronicled most of my hikes and adventures in my blog on this website. Please get in touch is you have any questions.
