I love winter nights.
I love sitting by the fire and relaxing with some ridicules expensive beer after burning five thousand calories.
Yeah, it was a five thousand calorie kind of day. Mary and I hiked twenty miles up Momyer Trail and we both felt like poo today. We both felt like quitting from the very beginning and at the end when she almost had to carry Charlie dog the last few miles, well I felt like Charlie.
Which means I completely deserves my twenty dollar sour beer and my dinner of carnitas tacos and home made chili rellenos.
4 poblano peppers, roasted and cut with one slit for stuffing
3/4s cup shredded Colby Jack cheese
2 eggs
2 tab flour
1 tsp garlic salt
1 tsp garlic powder
1/4 cup coconut oil
Stuff the peppers with the cheese.
Bear the eggs until fluffy.
Combine the spices, eggs and flour.
Dredge each pepper in egg and fry in coconut oil on each side.
Place on a baking sheet, pour any extra egg batter on top and bake in the oven at 375 for twenty minutes.
