Breakfast of champions; Cashew Cookie Keto Protein Bars

This is the winter of my discontent, between almost no snow for my snowshoeing needs and a busted ankle. What is an outdoor adventure girl to do? If you asked Shakespeare, the Bard of Avon would definitely say write a long-ass poem. Back in the 1600’s low-carb was just not a thing and even the fanciest poets probably had never heard of Keto Protein Bars. Man, were they missing out!

The real answer to what the hell do I nosh on for my keto-friendly breakfast, besides a bowl of bacon, would be a Keto Protein Bar.  Here in this ski town, I like to bake up a batch of these easy Keto Protein Bars and say, See ya later, Big Bear Lake. Yes, we were heading north, to Las Vegas. If I couldn’t have snowy trails to snowshoe, well then at least I would have relaxing spa days, afternoons with a Jalapeno Margarita by the pool and thrift store shopping shenanigans galore. But if I want to fit in my vintage bathing suit by a Las Vegas pool, then that means many months of a hardcore keto lifestyle.

If you are also looking for an easy-to-make, simple protein bar, check these out! You can do all different kinds of cookie flavors with these, but cashew butter is by far my favorite. I know, I know, honey is not low sugar. Feel free to use Stevia or monkfruit if you prefer but I prefer these with just a small amount of honey.

Cashew Cookie Keto Protein Bars

Protein Cookie, perfect snowshoeing breakfast on the trail.

1/2 cup of cottage cheese

1/2 cup of cashew butter

1/4 cup of honey

1/2 cup vanilla low-sugar protein powder

1 teaspoon of vanilla

1 cup of almond flour

2 teaspoons coconut oil

2 teaspoons flax seeds

Place your cottage cheese in a blender until smooth. Next, in a mixing bowl, mix in the honey, vanilla and coconut oil with the cottage cheese. Mix in the protein powder, almond flour and flaxseeds.

Next, use an ice cream scoop to make cookie balls. Place them on a baking sheet and use a fork to press them down and make a pattern (Just like you would do peanut butter cookies). Bake these Keto Protein Bars at 350 for sixteen minutes.
