Seriously, the best Sweet Chili Aioli

 

Well, I did it. I survived the holiday rush. Was it easy this holiday season? Hell no! Working in the tourism industry, well it’s something I’ve done my whole work life and you think it would get easier but instead people get meaner and meaner. How are people not full of the holiday spirit? It’s December! Isn’t Christmas supposed to be about peace, joy and love? Some of these assholes really need some more mistletoe in their lives.

Or perhaps JD McPherson crooning Christmas hits on the radio as they make those holiday reservations with local hiking guides who they will definitely stand up on Christmas.

Yup. Ask me how my Christmas was. Well, I hiked ten-twelve miles a day with tourists while enduring a sprained ankle. My ankle hurts all the time. Icing never helped the swelling go down. I popped Alieve like they were Skittles and still, I had the painful ankle from hell. But still, I persevered because when you work in a tourist town you have to make the big bucks when you can. Strike when the iron is hot! Or the trails are snowy.

Oh but wait, we have no snow this year. Even with no snow in this ski town, I basically sold out for my hiking tours. Yeah for making some cash during the holidays, boo for limping around like a forest gimp for two weeks. But still, I kept upbeat, blaring Jingle Bell Rock from the speakers of my Jeep as I drove trailhead to trailhead all over Big Bear Lake.

Work has been so slow I even decided to work on Christmas. Who knew I would have the most terrible guests book with me on Jesus’s birthday? So because I decided to host a large hikers group on Christmas, I could only spend an hour and forty minutes with my family on Christmas day. I had to drive three hours round trip to reach the jolliest bunch of assholes on this side of Highway 330 in holiday ski traffic. And then when I finally rushed to the trailhead to meet these bozos for my paid hike, they canceled on me fifteen minutes before the hike! Not even an apology!

No apologies. No, I’m sorry for royally fucking up your Christmas holiday. Nothing. Oh and then the next day my dog was attacked by homeless people’s pitbull ( Who then cussed me out! WTA) Life in California, you go for a hike and come across homeless people with a free-range aggressive pitbull. All this is happening as the hiker group from the day before are calling me on the phone, yelling at me that I need to refund them. Um, no fucking way.

Oh and then there was the lady who called Airbnb and reported me for being a racist because I posted an adorable social media video of me dancing with my dog in the snow. And I hashtagged #TrumpDance Because my hashtags are relevant and trending I’m a terrible human being. Apparently.

Just over here, trying to find some zen.

Thirty-six hours of my experiences being taken down due to Woke Fake News means I lost a lot of revenue during what would normally be my busiest week of the year. Thanks, Karen.

And yes I do realize that I could just never speak my mind and shut the hell up about my political opinions but I live in a country where I am blessed to be able to have an opinion. I do feel strongly about my conservative thoughts and feelings.

And that was basically my holiday season. Oh did I mention my ankle is still throbbing and my cankle is still beyond ridiculously swollen?

Now here we are, the second week in Jan. Does my ankle still hurt? Oh yeah. I haven’t even been doing the Trump Dance recently because my cankles need a break. I am however getting back to the Keto Kraze and this spicy and easy aioli is a staple in my keto kitchen.

This Sweet Chili Aioli is so delicious, you will want to put it on just about everything! Sweet Chili Aoili is a holiday favorite. It’s a great dipping sauce for everything from Crab Rangoon Crispy Rice Squares to Anglo Indian Crispy Cauliflower Snacks.

Sweet Chili Aioli helps me stay in ketosis and happy. It makes every keto food not boring. Are you so tired of snacking on cheese and bacon? Make an iceberg lettuce wrap with turkey, that bacon and cheese and this crazy good Sweet Chili Aioli!

This Sweet Chili Aioli is such a great drizzle sauce for any keto Asian meal like Air Fryer Orange Chicken Salad or Five Spice Pork Paella.

Sweet Chili Aioli

1/2 cup mayonnaise

1/2 cup sweet Thai chili sauce

1/4 cup sriracha

1/4 cup Greek yogurt

That’s it!

Whiz up these three ingredients in your blender until smooth. This is the best dipping sauce for any appetizer. It’s great on a sandwich. It spices up those breakfast eggs.
