I’m starting to get to the point where if I have an accident while enjoying nature it’s not a big deal if I can’t see a bone sticking out of my leg. You know when you have your days when you say to yourself, if I survive this hike hell yes I’m eating carbs when I get home! Reuben Sandwich here I come!
Today I had my first fall on the mountain bike. I’m sore, bruised, bloody and beat up but I think I’m going to be okay.
More important Breeder’s Cup, the horse racing world championship is in three days and I can’t miss it for anything even if it means showing up to work in a wheel chair! As I lay in the wet dirt on a secluded forest road five miles from my car today just seconds after my head hit the trail and I thanked God I was wearing my helmet, my first thought was, oh shit I better not have broken anything… Breeder’s Cup is just a few days away!!!
Of course my dog didn’t even notice I fell. She was off chasing a squirrel I think.
Lassie she is not.
So now I’m headed home to drown my sorrows and my aching shoulder in carbs and sauerkraut and a delicious Reuben sandwich.
By the way, this is about two weeks after I “Gave up” red meat. Obviously I have no self control.
Whole Grain Reuben Sandwich with Spicy Pickles
2 slices Dave’s Whole Grain thinly sliced bread
Pastrami
2 slices Swiss cheese
Famous Dave’s Devil’s Spit Pickles
Sauerkraut
1 teaspoon mayonnaise
1 teaspoon ketchup
1/2 teaspoon pickle relish
Turn on the broiler to low.
Mix the mayonnaise, ketchup and pickle relish.
On a piece of foil layer the bread and toast one side in the broiler. Remove the toast from. The oven and top with the mayonnaise, pastrami and cheese on both slices of bread. Return to the oven just until the cheese is melted.
Remove from the oven again and layer on pickles and sauerkraut. Put the sandwich together and cut in half and serve.
