A new, thankfully plunger-free, Thanksgiving tradition
Creating a gourmet Thanksgiving dinner can be stressful enough. Especially when your hobo brother keeps plugging up the toilet. (Oh Thanksgiving traditions!) And when he’s not asking where the plunger is, he’s requesting a soda. It’s 2024 Bro, who drinks soda?
My boyfriend and I have strong feelings about a lot of things, The 2024 election is one of them. Liberal family members are another. We also have a unique perspective on how to do baklava right. I personally love Baklova but I have had it at restaurants where it is stale so often! This Pumpkin Spice Baklava is the opposite of a cheap stale baklava. Even better, it’s a easy Thanksgiving dessert you can create in your waffle iron!
I adore the idea of creating my own Pumpkin Spice Baklava almost as much as I love trekking through the fall colors with my adventure pup. My boyfriend’s opinion is baklava is always too sickeningly sweet. I like this version because I can add extra heart-healthy high protein delicious nuts and make it just as sweet as I like. Feel free to add whatever nuts you like to the equation. I have created this with nuts from macadamias to brazil nuts; The possibilities are endless!
Dessert from the waffle maker, what?
This is the easiest and most delicious Thanksgiving dessert to prepare for your family this holiday season! Make the nut mixture and the honey mixture ahead of time. Your family will be fighting for these Baklova bites as they come hot off of the waffle iron.
Waffle Maker Pumpkin Spice Baklava
1 package puff pastry
1/2 cup walnuts
1/2 cup pecans
2 teaspoons almond flour
2 teaspoons salted butter, room temperature
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoons ground nutmeg
1 teaspoon vanilla
2 teaspoons of honey
1 teaspoon of rose water
1 teaspoon of lemon juice
1/4 cup salted butter, melted
Mix the rose water, honey and lemon juice and set aside. In your food processer or Nutribullet add your nuts of choice, the almond flour, cinnamon, cardamom, ginger, nutmeg, vanilla and room temperature butter. Blend this into a paste.
When you are ready to create Pumpkin Spice Baklava, set down one sheet of puff pastry. Cover with the nut mix and another sheet of puff pastry. Oil your waffle iron with butter. Seal the edges of the “Waffle” then place in the waffle iron to cook. When your waffle is cooked to the desired consistency remove it from the waffle iron. Slice into quarters with a pizza cutter and drizzle they honey mixture over the top.
