I don’t love the dilemma sitting in the envelope on my kitchen counter. Opening the mail and gazing down at my voter’s ballet brought a little bit of anxiety this November morning. What would Jesus do? I think he would go for a hike. The fall colors are changing outside the windows of our cabin and it’s a great time to hit the trails of this unbelievably blue state. Sometimes it’s hard being a bright red dot in a liberal blue state. I feel like I’m the only one not driving around high on The Weed almost every day in this cesspool of a state. For a conservative woman in a very unpredictable world, finding some zen in nature is a good choice. It’s a way better choice than getting so high on weed gummies on your day off that you can’t even hold a conversation. (True story, to some of the liberal Californias I know, this is their pathetic weekend) And taking your pup for a fall colors walk is a better choice than getting in another argument with strangers (Or family!) on The Facebook.

94 year-olds can say what they want!

Praying for a miracle on Super Tuesday

age of 94, don’t worry about being politically correct. You survived the Great Depression, The Dust Bowl and a Global Pandemic not to mention four years of Trump in office! Maybe when I get to be ninety I can have a political opinion without friends and family telling me I’m oh so wrong every single day.

Meanwhile, here it is almost Super Tuesday and I’m contemplating how there are 326 million citizens in America. And these are our choices. It breaks my heart and makes me want to throw my Diva Cup across the room that a woman who basically slept her way into politics is steps away from possibly being America’s first woman president.

You go girl!

This is what we are teaching young women. If Only Fans doesn’t work out girls, there is always politics. That is what I personally take away from the Kamala Harris campaign.

I’m quite sure my 94-year-old liberal grandmother is so thrilled to see a woman so close to the doors of the White House but I think this is just pathetic. Women who think it’s okay to sleep their way to the top, AKA being the mistress to a man thirty years older than you to get on the ballot (Back in the day) to become a District Attorney in California. What does this teach young women? And why does nobody talk about this?

I bought this awesome Jo and the Ho Gotta Go magnetic bumper sticker for my Jeep but my Jeep is too modern and the magnet does not stick to anything! So I might as well go create some Thai food to get my mind off this crazed political landscape in front of me.

No matter what your political leanings are we can all agree on one thing this late fall; Thai food is delicious!

Do you have a favorite Thai recipe? Well, this might just be your new favorite! Pickled ginger, basil and Thai sweet chili sauce; Really does it get any better?

I always use premade grated garlic/ginger in all my cooking but I feel like with Thai food the flavors are so intense. You need to take the time to grate that ginger and chop that garlic by hand. Or in this case use pickled ginger, which is such a unique ingredient!

Keto Thai Chicken

1 package Thai keto noodle dish, cooked according to directions on the box

1/4 cup dark soy sauce

1/4 cup sweet Thai chili sauce

3 freshly grated garlic cloves

3 teaspoons chopped pickled ginger

1 red bell pepper, sliced thin

1 teaspoon sesame oil

1 shallot, chopped thin

1/2 cup bean sprouts

1 pound of chicken thighs with skin

1/2 cup of fresh basil

3 teaspoons potato starch

1 teaspoon of white pepper powder

1 teaspoon salt

2 teaspoons of sesame seeds

1/2 cup of Gochujang nuts

Lots of canola oil for frying the chicken

As the oil heats, dredge the chicken thighs in the potato starch, salt, and white pepper powder. When the oil is hot, fry the chicken until it is just undercooked. (You will finish it in the air fryer at the very end.) Mix together the soy sauce, sweet chili sauce and pickled ginger.

In the sesame oil, fry the shallot until browned. Add the bell pepper slices and the garlic after a few minutes. After the garlic is cooked add in the chopped basil. Cook for just one minute and add in the mixed sweet chili sauce. Let heat up to a simmer. Add your bean spouts and the cooked Pad Thai Noodles at the end. Before you stir fry in the Pad Thai noodles, add your chicken to the air fryer, and fry at 400 for 8 minutes. Add the chicken to the noodles at the very end. When you are ready to serve, garnish the dish with the candied Gochujang Nuts and the sesame seeds.

Serve up a big ‘ol helping and then don’t forget to vote!
