Gingered Banana Bread White Chocolate Truffles

It’s only a Christmas miracle that led me to be on my feet all afternoon as I created over twelve dozen Christmas cookies for my small business yesterday. It’s been almost a full week of nothing but random ankle pain. And that has me sitting on my fat ass on the couch icing my ankle way more than trekking the mountain trails with my adventure pup. So of course I deserve to shove some Christmas Spice Snowflake Cookies at my face, right?

Every holiday season I bake up a grip of Christmas cookies for my guests that book my hiking tours and Jeep tours. Groups can add on these gourmet cookie selections to enhance their outdoor expiernce. Because what enhances your trek up an eight thousand-foot mountain more than shoving Coconut Christmas Tree Brownies at your face?

Why do I hike miles in the snow? So that I can enjoy decadent Christmas desserts during the holiday season. And still fit in my favorite pants! I’m not going to lie, sometimes I sneak a few of these into my backpack for a summit snack. It’s the holidays; Bring on the Banana Bread Truffles!

Just about anytime I create a Gluten-Free Banana Bread Muffins in my mountain kitchen, I freeze a half batch of muffins. These truffles are oh so easy when you already have Banana Bread in the freezer. You can use your favorite Banana Bread for these truffles, or even buy store bought Banana Bread.

I love me some delicious homemade banana bread. Dip it in white chocolate, even better! Make sure you have toothpicks on hand for easy chocolate dipping.

Gingered Banana Bread White Chocolate Truffles

2 cups of Banana Bread, crumbled

1/4 cup candied ginger, chopped up

1/2 cup white chocolate, melted

1 teaspoon coconut oil

1/4 cup cream cheese, at room temperature

Toothpicks

Mix your candied ginger, crumbled banana bread and cream cheese. Form into Banana balls. Mix the coconut oil into your melted white chocolate. Use the toothpicks to dip your banana balls in the white chocolate. Set aside so the white chocolate can harden.
