Every time I pull myself dripping with sweat, muscles screaming in pain, to the top of another peak, I start dreaming about what I will make for dinner. After six hours of hiking uphill gaining near five thousand feet of altitude all I can focus on is when will I have another meal that is not Cliff Bar based.
I say that, although today I stumbled on the best peanut butter bar I have ever had in my entire life! These Clif Peanut Butter Builder Bars have twenty grams of protein and thirty grams of carbs, perfect for hiking up a 10,400 foot mountain! Yet even with all that protein and carbs soaking into my veins I was still craving real food. I needed a burger or a taco or a fillet of salmon.
Luckily the week before I had created this delicious four ingredient salmon dinner. So easy, just mix the sauce, slather on your salmon fillet and bake for twenty minutes! ( plus serve veggies like broccoli. asparagus and cauliflower on the side.)
Creamy Dijon Salmon
one salmon fillet
1/2 cup sour cream
1 tsp tarragon
Mix the mustard, sour cream and tarragon. Spread this on your salmon fillet and bake at 375 for twenty minutes. Serve with steamed broccoli, asparagus and cauliflower on the side.

I use to bake salmon in a mustard sauce all the time! Then my hubs got a little over loaded on salmon (hey, that was his own doing, haha). LOVE
