Candied Ginger Grapefruits

   I’ve been trying to eat healthy for three days.
   It’s been really hard and I have done amazing (Well except for last night when I lapsed and had a delicious cold Heineken with dinner)
    It is amazing how three days of eating healthy is paying off; even though I have only run a few miles each day I feel amazing!
   This morning I tried a new recipe, making my own Candied Ginger Grapefruit.


   Of course Zion decided he would have a lizard for breakfast; gross, what an asshole and I have a feeling I will be cleaning that up later.
   So while he was trying to act like an outdoor cat I candied the ginger, added some Cinnamon and slathered the sliced grapefruits.
  All I can say is wow; they taste better than a lizard.



Candied Ginger Grapefruits

2 grapefruits, cut in half
1 quarter size chunk of ginger, grated fine
2 tab raw or organic sugar
1/2 tsp cinnamon

Slice the grapefruits in half.
Mix the sugar, ginger and cinnamon. Slather this on the grapefruits and broil for 5 to 7 minutes until cooked.

    This sounds like a great, healthy snack!! I love that you used fresh ginger to make the candy. Yum!
    I can’t believe your cat ate a lizard… so gross! ;p
