Thanksgiving meal 2010

We had Thanksgiving in 2010 at my Grandparent’s house on Firwood in Running Springs





Amber’s brined Turkey

1 pre brined turkey
maple syrup
Oak Glen-ish apple juice
Kerry Gold Butter
Rosemary
Sage
Thyme

Rub all sides of the turkey with the herb butter
Bake the turkey in the oven as per directions on the wrapping. Baste every hour with the mixture of maple syrup and fancy apple juice.




Spinach Gratin Casserole

2 cups wheatberry’s cooked
1 bag frozen spinach, defrosted
1 cup shredded aged Gruyere cheese
1/2 cup Parmesan cheese
1/2 onion
1 cup half and half
olive oil

Cook the chopped onion in the olive oil.
Add the spinach, until warm, then stir in the half and half and the cheeses. Pour all  over the wheatberry’s in a baking dish with a sprinkle of cheese on top. Bake at 375 for 20 minutes until the cheese is browned.


Mississippi Mud Pie
4 ounces unsweetened chocolate
2 eggs
1 1/4 cup sugar
1/2 cup flour
1 tsp vanilla
1/8 tsp salt
1/4 cup butter
pecans or walnuts
Melt the chocolate and the butter in a saucepan. Add the sugar and vanilla. Let the mixture cool for ten minutes. Add the eggs, salt and flour. Layer the nuts on top.  Bake at 350 for 24-26 minutes.
Let cool.
Mix the following ingredients for the frosting, layer on top and put marshmallow fluff over the top.

1 stick unsalted butter
3 tab cocoa
6 tab milk
1 pound powdered sugar
vanilla
