Sweet Potato Waffles with Candied Pecans and Brown Sugar Icing

    Some mornings living your life like every day is a vacation means waking up in a bed and breakfast.  
    Except in a real bed and breakfast I don’t think there would be a angry yet happy cat jumping on my bladder and mewing.
    Just because I did not actually wake up on vacation today at a bed and breakfast where I don’t have to deal with cleaning up empty beer bottles from last nights Cohen Brothers movie fest and a sink full of dishes, does not mean I can not eat like I am at a bed and breakfast.
   I’m going to make Sweet Potato Waffles and eat them on my balcony in the forest.
   Than I’ll go for a off road hike/ creek adventure for a few hours before my work day begins.,

   Sweet Potato Waffles with Candied Pecans and Brown Sugar Icing


1 Sweet Potato, Roasted
1/2 cup whole wheat flour
1/2 tsp baking soda
1 tab honey
1 tsp coconut oil, melted
1 cup buttermilk
1 egg
1/2 tsp cinnamon
1/2 tsp fresh grated nutmeg

1/4 cup candied pecans

frosting

1/4 cup butter
1 tab brown sugar
1/2 cup powdered sugar
1/2 tsp vanilla
1 tab milk ( if needed) to thin

Scoop the innards out of the sweet potato and mash. Mix with the egg, honey and coconut oil and the buttermilk. Add the flour, spices and baking soda.
Cook the waffles in an oiled waffle iron.
For the frosting, mix the melted butter, sugars and vanilla. Add a little milk if it is to thick.
Frost the waffles with the frosting and top with the pecans.
