Sweet Potato Veggie Burgers

I’m currently recovering from having way to much fun in nature.
It’s been a week of snow shoes hikes and running up mountain trails in snow.
My cat trax are always strapped to my Asic running shoes these days to help me not slip and slide on the icy trails.
Believe me, my muscles hurt this week.
To give my muscles some relief I have been juicing a lot and eating natural foods, mainly just fruits and veggies.
These sweet potato burgers are so delicious and they are full of all natural goodness.

Sweet Potato Veggie Burgers

1 sweet potato, roasted  and peeled
1/2 cup Great White Northern beans (canned)
1/2 cup tahini sauce
1/4 cup sun dried tomatoes
1/2 cup bulgur wheat or barley, cooked
1 tsp garlic salt
1 tsp cayenne
1 cup panko bread crumbs
1/4 cup coconut oil
1/4 cup whole wheat flour, optional

Put the sweet potato, beans, sun dried tomatoes and tahini in the mixer. Mix thoroughly until no lumps remain.  Add the flour just until the mixture comes together.
Add the cooked bulgur, quinoa or barley and the cayenne and garlic salt, stirring to combine.
Form into patties and roll in the panko.
Fry each patty on each side in coconut oil.
Serve with a side of avocado or burger style.

If you want to make these gluten free substitute the wheat products for quinoa and almond meal.
