Sweet Potato Sun Dried Tomato Hummus

Last week Mary and I decided to venture up the Momyer Creek Trail a few days after a snow storm.
I Completely forgot that you have to cross the creek/ Santa Ana River before starting up the trail head.
I just started doing this hike last spring and after the weak winter we had the creek crossing has been super low.
During the summer we just walked through the crisp cold water.
Today on our hike we brought Mary’s little dog Charlie, a Benji like creature.
As soon as we saw the rushing kind of some what frozen creek water I thought hmm this could be a problem all three of us getting across safely.
I was just thinking this when Charlie went running across the thin ice!
Before we could even think to yell
” Charlie no!” She was across the creek and safe on the other side.
Luckily she is a light weight dog at only about twenty pounds and she did not break the ice.
Mary and I were trying to figure our own way across with out soaking our hiking boots when Charlie decided to slide slash run back across the creek to us, almost giving us heart attacks!
Mary than decided the best idea would be just to carry her little dog until we crossed the creek and were away from it.
It would end our day of hiking if Charlie fell in the freezing creek waters.
Luckily we found a place to easily jump across the half frozen creek and were on our way to the trail head a few minutes later.
This sweet Potato Hummus is a great trail snack and it’s packed with healthy proteins to give you energy for long distance hiking.
Sweet Potato Hummus

1 sweet potato
1/2 cup sun dried tomatoes in olive oil ( with 2 tab olive oil)
1/2 cup tahini
2 tab lemon juice
1 tsp garlic salt
  
Combine all in the food processor. Serve with little cherry tomatoes, pita chips or snap peas.
