St Patrick’s Day Breakfast, Leafy Green Kale Pancakes

 

 

   In honor of St Patrick’s Day I thought I would make some leafy green kale pancakes!
   Who wants to drink carbo loaded oh so filling what the hell do they use to dye it green, green beer when you could have green fiber loaded pancakes and spend the day after St Patrick’s Day on the toilet?
    For a different reason than most people do after St Patrick’s Day.
    I had to work on St Patrick’s Day so no beer and fun and good times for me.
   I actually forgot to wear green last Sunday; I warned friends,
   “If you pinch me, I will probably fart and I’m full of Kale Pancakes. Still want to pinch me?”
   No one pinched me.
   Smart move.
   A friend told me how he makes pancakes with Spinach and I had a huge bag of kale in the fridge so I tried them with kale and these leafy green pancakes turned out so good! I could eat them without syrup! They are fantastic for a St Patrick’s Day breakfast before the beer filled shenanigans begin!

Leafy Green Kale Pancakes

1 cup kale
1/2 cup oats
1 banana
1 egg
1 tsp vanilla
1 tsp protein powder
2 tsp almond meal
1/2 tsp baking soda

Coconut oil for frying.

In a food processor chop the oats and kale until fine. Mash the banana and add that and the other ingredients. Fry each pancake in coconut oil.
Serve with agave maple syrup or raw honey.
