Here are a few spring time recipes using ingredients from my garden like my fresh, organic, parsley, chives, basil and green onions. Also included is my recipe for flat bread Alfredo Pizza that I made at work the other day. I mean, just to make up for how healthy the first recipe was!
Bulgar Wheat Salad with Smoked Chicken
Put the apple juice in the smoker’s drip tray along with a gallon of water. Roll the raw chicken in the mixture of sugar, pepper, salt and paprika. Smoke for 1 1/2 to 2 hours until chicken is a Carmel color.
1 cup Bulgar wheat or wheat berry’s, cooked
2 stalks celery, chopped
2 green onions, chopped
juice of 1 lemon
1/2 cup dried cherries
1/2 cup walnuts
2 tab fresh parsley
Mix all in a serving bowl and top with the diced chicken
Flat Bread Alfredo Pizza
1 package flat bread
1 package premade garlic bread sauce
1 package Boursin or Rondele Cheese spread
1/4 cup Parmesan cheese
1/2 cup mozzarella, shredded
1/2 cup baby broccoli, cut into pieces
6 baby portabello mushrooms, sliced
salt and pepper
in a glass pan, roast the mushrooms and broccoli with the olive oil and salt and pepper for 20 minutes at 350. Mix the garlic spread, Boursin and Parmesan. Spread this mixture on the flat bread. Top with mozzarella, then the veggies. Bake for 12 minutes at 375.
