Smoked Turkey Breast

     I would love to smoke a whole turkey, but it takes something like twelve hours for a small bird! I want smoked turkey, but I’m not getting up at 2 A.M. to start it! My favorite part of the turkey is the skin, and sadly I couldn’t find breasts with the skin still on. Well, I have bought the Arron’s Kosher one’s before, but the meat was so tough and rubbery I just threw it away! So I just tried this recipe with turkey tenders, which I than cut into smaller strips, as we were bbqing with friends and I didn’t want to make hungry friends wait for hours for the meat to smoke. I also threw some random sausages on the smoker… So good! Especially smoked Italian sausage!


Smoked Turkey Breast


good quality apple juice
salt
brown sugar
chili powder
garlic salt
pepper


brine the breasts one hour in a mixture of 1 cup apple juice, 1 cup water, 2 tab each sugar and salt.  Mix equal parts garlic salt, brown sugar, chili powder, and pepper. Dredge the tenders in this mixture. In the bowl of the smoker, add one cup apple juice to the water mixture. Smoke the tenders one to two hours until cooked through and a Carmel brown


Spicy Cole Slaw


shredded cabbage
green apple
red onion
spicy pecan mix
mint


dressing

1 tab Dijon mustard
1 tsp sugar
3/4 cup mayo
1 tab chili powder
1 lemon juiced
salt and pepper

Mix the dressing. Cut up the apple and red onion, mix all in a bowl
