Vegan Red Leaf Lettuce, Squash and Almond Salad

This is a mostly true tale of a cat I once owned who was kind of an asshole. He was a cute and lovable asshole though, so there was that.

Once upon a time there was a long haired asshole cat named Zion. He loved to jump on the counter and steal my goat cheese as soon as I turned my back. Anyone who knows me, knows do not get between Amber and her goat cheese.

One gorgeous mountain springtime day, I bought a chive plant for my garden, because well, even though we live at six thousand feet and there is still snow in the back yard, it is springtime, damn it!

Getting ready for work the next a.m. I cut off some chives to put on my omelet and they were delicious.

 Than I drove to Big Bear and ran six miles to celebrate this gorgeous, oh I really want it to he springtime day. When I came home a few hours later the first thing I noticed was that there was puke every where. From a cat. Not a human. This is kind of thing is pretty normal in my cat filled home so I didn’t think anything of it.

I then spent an hour raking leaves with my assistant and in-winterizing my garden. After the yard was cleaned up it was time to make some German style braised cabbage for my lunch.

That’s when I realized all my chives were gone. Dumb Dumb ate all of my chives! He must have thought they were grass, spicy, spicy grass!
Not only that, but I then let him lick the bacon plate and not only did he turn his nose up at BACON but he tried to bury the plate because apparently that weirdo thinks bacon smells like poo! What was wrong with that cat?!
And that is the true tale of how I tried to grow chives one springtime and failed. And also had a cat named Zion who was really an asshole.
Now here is a great recipe for a springtime salad that you can add chives to, unless your cat ate all the chives.

Red Leaf Lettuce, Red Cabbage and Almond Salad with Carrot Miso Dressing

1 cup red leaf lettuce
1 small yellow squash, cut into pieces
1/4 cup shredded red cabbage
1 Persian cucumber, sliced
1 green onion, sliced
3 sprigs mint, diced
3 sprigs basil, diced
1/8 cup slivered onions
Slice up all the veggies and add the almonds and salad dressing.

Carrot Miso Dressing

2 carrots
2 quarter size chunks of ginger, peeled
3 tab miso paste
1/4 cup rice wine vinegar
2-4 tab water
Combine all in a food processer or nutri bullet. Add more water if the dressing is not liquid enough.
