Recovering, and a recipe for Crab Omelets

     Last time I wrote a blog it was a month ago, and I squeaked it out between running to and fro from my downstairs bathroom. The good news is after  two weeks of being violently ill, I am finally healthy again! The bad news in all of this is there is no way I will be able to climb Mt Wilson as I was planning in late April. I’ve lost a month of training for the 15 mile hike. This really saddens me, but Mt Wilson will be there next spring and we will do it in 2012.
     I went to urgent care a few weeks ago after a week of toilet squats (The only thing close to exercise I’ve had in a month) Somehow I had managed to pick up a bacteria that is normally found in hospitals. Weird. I have no idea how that happened. The medication I was put on made me extremely sick, and I spent 2 days not only doing toilet squats, but also I couldn’t hold down ANY food. My parents had to come over and feed my cats because I couldn’t make it down the stairs to their food, and they were beginning to eye me like a steak.  My Dad also forced me to drink chicken broth, which I hate. Ew, hot chicken juice that tastes like salt. I know, I know its good for me and I did drink some. I’m just saying its gross to my sensitive palate after years of goat cheese and more goat cheese. Then my mom threaten to have my 85 year old Grandma come over and clean my house. Okay # 1, yes I realize my counters and coffee table are covered in cat toys, books, used tissues, medications and cats, but I did just clean three days ago! I do not need my senior citizen Grandma to come detail my house!  On the third day I managed to make my amazing Crab Omelet, (See recipe below) and I managed to eat two bites of it. It saddens me to think I threw it away but I just couldn’t get any food down at all. I had no appetite which is extremely odd for me; I never stop eating!  Raffi says that if you didn’t know me and talked to me on the phone one would think I was a very large woman, because all I talk about is food, every day always. 
     So here is the recipe for the Omelet, its so good! When your not recovering from the Squirrel Flu and have the appetite of a normal human being. Yes, I make my scrambled eggs with Greek yogurt. Greek yogurt is so amazing! Try it in your scrambled eggs, it makes them so tart and creamy!

Crab Omelet

1 can crab
2 eggs ( or 3 egg whites)
1/2 cup Greek yogurt
juice of a 1/4 lemon
coconut oil
3 small red potatoes
salt
dill
pepper
cayenne
1/4 cup goat cheese
franks red hot sauce on the side

Poke holes in the potatoes and microwave them 3 minutes until soft. Heat oil in the pan, add the potatoes with salt dill, and pepper,  brown until crispy. While the potatoes are browning, mix eggs, crab, lemon, dill, pepper and cayenne.  When the potatoes are mostly cooked, move them to the side of the pan, add more coconut oil, add the egg mixture. When it is set, turn it over, dollop goat cheese, add a sprinkle of cayenne, dill and a squeeze of lemon. Turn the omelet in half covering the goat cheese and serve with the potatoes, and plenty of franks red hot sauce.
