Pineapple Curried Brown Rice

     I don’t want to admit its autumn, I mean its not even the last week of August yet!
     But a certain fall like chill is in the air and the ferns are already turning from a deep green to a gold as I run my mountain trails this morning.

     I love the morning chill at seven a.m. when I’m running.
     I hate it at noon when I just want to relax with my feet in a creek or a lake and I can definitely feel the chill of fall in the air.
    Stupid drought; confusing nature!
    Well if the weather is going to decide to be ridicules and fall like all early than I am going to make something truly amazing, hearty and fall like; this Pineapple Thai Curry Fried Brown Rice

Pineapple Curry Fried Brown Rice

2 cups Brown rice, cooked
1 whole pineapple, split and half and the insides cut out and chopped
2 tab soy sauce
1 tab sesame oil
1 tab curry powder
1/2 cup raisins
1/2 cup cashews
1 tab fresh ginger, minced
1 chicken breast, cut thin into strips
1 Italian sausage
1 green onion, chopped

Cook the chicken breasts and the Italian sausage on the BBQ.
Set aside to cool.
When cool chop up the chicken breast and the Italian sausage.
Add the sausage to a large pan on the stove too and throw in the green onions and ginger to cook in the day from the sausage for two minutes.
Add the brown rice, soy, sesame oil and curry powder.
Add the chicken and raisins.
Let this cook for a few minutes, add the pineapple and any remaining juice.
Let this cook for two more minutes.
Add the cashews and serve.
