Peas Pearl Onions and Red Potato Mash

    This is my take on the classic Holiday Peas and Peal Onions. This dish is so amazing! The secret is to use fresh drippings from a turkey or chicken you just roasted. Canned turkey stock will work, but you lose some flavor.


2 cups peas
1 cup pearl onions, peeled
1/3 cup pancetta
thyme
1/2 cup drippings from a chicken or turkey
slight squeeze of lemon juice
6 red potatoes, baked and mashed
1 cup half and half


    Cook up the pancetta and thyme and than cook up the onions until a little crispy in the pancetta drippings. Add the chicken or turkey drippings until just warm, mix in the peas. Add the potatoes and the lemon juice. When cooked through mix in the half and half and serve.
