Mother’s Day Meal; Smoked Pork, Chicken and 6 grain bread

Apple Juice Infused Smoked Pulled Pork


1 large piece of pork butt
3 cups apple juice

2 tab smoked paprika
2 tab pink Himalayan sea salt
2 tab pepper
1/4 cup brown sugar
Thyme
2 cups water
BBQ Sauce of your choice
(I use Tyler Florence Recipe, but everyone likes a different kind of sauce)


In a large container put the pork, water 1 tab salt and 1 1/2 cups apple juice. Let marinade 2-4 hours in fridge to brine the meat. Put the remaining cup of apple juice in the smoker along with the boiling water.
Mix the  thyme, sugar, remaining salt, pepper and paprika. Dredge the meat in the mix, put on smoker for 2-3 hours. (Depending on how much time you have) Move the meat to the oven, add the sauce, cook 2-3 hours until the meat is falling off the bone at 350.




Smoked Chicken


1 cup apple juice
water
1 tab paprika
1/4 cup brown sugar
1 tab pepper
1 tab sea salt

Add the boiling water and apple juice to the smoker’s water bowl. Mix the spices and sugar, coat chicken. Smoke chicken 1 to 1 and 1/2 hours until cooked through.




6 Grain Bread


1 package active yeast
1 1/4 cup warm water
1 tsp salt
2 tab brown sugar
1/4 cup honey
1/4 cup milk
2 tab coconut oil, melted
3 tab ground flax seeds
1 cup whole wheat flour
1/4 cup spelt flour
1/2 cup cornmeal
1/4 cup almond meal
1/4 cup oat bran
1/4 cup brown rice flour




This recipe is for a bread machine. Put the warm water, yeast and honey in the bowl of the bread machine. Let sit five minutes. Add the rest of the ingredients. You can add dry fruit like Cherry’s or cranberries also. Start bread on your preferred setting.
