Marinated Beet Salad with Cashews and Pistachio Oil

      I guess I should thank god for Dumb Dumbs or I would really have nothing to blog about.
      I have a new test if a boy is smart enough to date me.
      I don’t mean city smart.
      I mean mountain smart.
      It used to be a good test of a guys wilderness personality if they dressed in more North Face and less Affliction T shirts.
      This week after a day fishing at the lake I have a new screening process.
      I know, it sounds like the beginning of a Jeff Foxworthy joke but

     If you are not smart enough to open a beer proof trash can than you are not smart enough to get a kiss goodnight!
     
     Seriously is it to much to ask to go out with a guy who is smarter or as smart as a black bear?
      I don’t think I’m asking for a lot here. 

     After a day at the lake fishing and watching a Dumb Dumb try to figure out the secret to getting the bear trash can open. ( I finally did it for him) I like to go home alone and make this delicious marinated beet salad.

     You can buy these delicious marinated beets at Whole Foods or Vons.
     Every flavor is absolutely amazing!

Marinated Beet Salad with Cashews and Pistachio Oil

Marinated beets
Crumbled goat cheese
Roasted sliced almonds
Butter lettuce
Baby lettuce
Lemon juice
Salt and pepper
Pistachio oil

Slice the beets.
Layer on a fancy plate with the lettuces and the crumbled goat cheese.
Top with the cashews and salt and pepper.
Mix the oil and a little lemon juice and just add a little of this dressing to dress the salad.

    I have seen more people struggle with those bear-proof trash cans than one would think possible!! Recipe sounds delicious 🙂

    I am not a fan of beets, but I love cashews and everything else in the salad, so I’d give it a try.

    As for Dumb Dumb and the trash can; the story is good for a laugh, so not a total waste 🙂
