Japanese Beef Brown Rice Bowl

When a ten-year old walks into the kitchen and says

“It smells like poo in here” You know it is going to be a delicious dinner!

To be fair, I always think that raw meat and meat cooking smells disgusting so I guess I can see where she is coming from.

Also to be fair, this home-made and incredibly simple Japanese Style Beef Brown Rice Bowl is absolutely amazing and thanks to the wonders of the crock pot makes the easiest healthy dinner. Seriously, brown rice instant pot recipes are just the best thing since trail mix!

( Well, it does have a ton of brown sugar in it but besides that…) After a long day of burning calories whither its hiking, trail running, cycling or Insanity workouts this easy crock pot dinner is awesome to come home too!

Japanese Beef Brown Rice Bowl

1 pound flank steak, cut into bite size pieces

1/3 cup arrowroot powder

1/2 cup brown sugar

3/4 cups soy sauce

3/4 cups water

1 tablespoon chopped garlic

1 tablespoon chopped ginger

2 carrots, peeled and chopped into bite size pieces

1 package shiitake mushrooms

1 cup spinach

2 tablespoons sriracha

1 green onion, diced

2 cups cooked brown rice

1 cup chopped red cabbage

1/8 cup chopped cashews

In a crock pot place the water, soy sauce, garlic, ginger and brown sugar.

Place the chopped steak in a Ziploc bag with the arrowroot flower and shake to cover the pieces. Add this to the liquid and cover on low for 3-5 hours.

One hour before serving add the sriracha, spinach and mushrooms.

Serve this in a bowl over the brown rice, raw cabbage and sprinkle the nuts and green onions on top.
