Horse Radish Potato Salad with Aioli Mayonnaise

If there is one thing I do very well its decide to take on a massive physical challenge with absolutely no time to train.

So yeah, my boyfriend and I are seriously considering running the Santa Anita 5K in two weeks.

It’s only a 5K! I’m sure you are thinking. Most folks can do that in their sleep! This race is harder than you might think at first glance. For one thing half of this race takes place on the Santa Anita main race track. So you are running half of those 2.8 miles in sand, like at the beach. My best friends do this race every year and every year it seems I have a reason for missing it.

I’m in the recovery stage of sciatica pain, ouch and have not run in two months. Today as I sit couch bound and bummed out that I can barely walk the dog, let alone run, running 2.8 miles seems a little hard.

This race is a great excuse to head to Los Angeles for a few days of betting on the ponies and get out of our mountain town and into the city.    efore we head into the city for a few days I had to use up some of those potatoes and eggs in the fridge and I came up with this easy potato salad recipe.

 

Horse Radish Potato Salad with Aioli Mayonnaise     

3 tab sour cream
1 tab grated horseradish root
1 tab aioli Dijon
1 tsp chives
1 tsp garlic salt
2 cups russet potaoes, boiled and cut into slivers
2 eggs, boiled

 

Mix together all ingredients and serve.
